Nutrition science isn't as settled as the headlines suggest, but the parts that ARE settled — how much protein you need to maintain muscle, what micronutrients are routinely under-consumed, why sodium matters even when blood pressure is fine, what an ingredient list legally has to disclose — are enough to make most food decisions confidently.

This pillar starts with macronutrients (protein, carbohydrates, fats) and works through the practical questions: how much, from what sources, and what changes when you're cutting, training, or aging. Are carbs bad? +
No — but added sugars in liquid form (sweetened drinks, juices) consistently associate with worse health outcomes regardless of total calories. The rest of the carb story is mostly fiber and timing.
How much protein per day? +
Sedentary adults: 0.8 g/kg/day is the floor (RDA). Active adults losing weight: 1.6–2.2 g/kg/day to preserve muscle. Older adults trend higher (1.2 g/kg minimum) because protein synthesis efficiency drops with age.
Should I take a multivitamin? +
Most people don't need one if they eat a varied diet — but vitamin D, B12 (especially on plant-based patterns), and omega-3 are the three worth specifically checking, and a basic multi is cheap insurance for the others.
Is saturated fat bad for you? +
It's complicated. The 2020s evidence is more nuanced than the 1980s blanket recommendation. Saturated fat in the context of an otherwise low-fiber, high-refined-carb diet does increase cardiovascular risk; saturated fat in the context of a Mediterranean pattern does much less. The category to genuinely avoid is industrial trans fat, which is now mostly banned in the US food supply.
What's the difference between added sugar and natural sugar? +
Natural sugars in whole foods (fruit, milk, plain yogurt) come bundled with fiber, water, vitamins, and protein that change how the body absorbs the sugar — slower curve, more satiety, no isolated insulin spike. Added sugars come alone, with no fiber buffer. Whole fruit consistently associates with better health outcomes; added sugar with worse ones, especially in liquid form. How much fiber do I actually need? +
Adult targets: 25g/day for women, 38g/day for men, per the Institute of Medicine. The average American adult eats about 15g/day — so getting to target requires deliberate effort. Best sources: legumes (15–20g per cup cooked), whole grains, vegetables, fruit with skin. Fiber supplements can fill gaps but aren't equivalent to whole-food fiber for the gut microbiome.
Are organic, non-GMO, or grass-fed labels worth the premium? +
On nutritional content, mostly no. The differences between organic and conventional produce on micronutrient content average under 5% — within measurement noise. The genuinely-different cases: organic dairy and meat have somewhat better omega-3 profiles; the EWG "Dirty Dozen" produce list has higher pesticide residues conventionally and is the most defensible place to spend the premium. Non-GMO has no nutritional difference; the question is about agricultural philosophy, not personal nutrition.
Why do nutrition headlines contradict each other so often? +
Three reasons. First, individual studies — especially observational ones — generate noisy results; you need 5–20 of them to identify a real pattern, and journalism reports them one at a time. Second, the food industry funds studies that disproportionately produce favorable findings for whatever sponsor wanted them. Third, journalists optimize for headlines, not nuance.
